Prasouda Diet Recipe Couscous and Bean Salad

One of the things I love about this Prasouda recipe is all the ingredients are easy to find.

If you live in a rural area you might have a little more difficulty finding these so I’ve included links to a resource page where you can order the authentic Prasouda Diet ingredients online for your convenience.
Ingredients:
** For 6 servings **
  • 6oz of packaged couscous wild mushroom mix
  • Dijon mustard, 1t
  • Italian light dressing – 1/2c
  • 1/4c oven roasted boneless chicken breast – Diced
    **top with a liberal amount of chili powder and basil mix before you put in oven**
  • 16oz cut green beans – fresh (cooked al dente) or canned (packed in water)
  • 16oz red beans – rinse and drain well
  • 16oz chickpeas – rinse and drain well
  • 1/3c kalamata olives – pitted and halved
  • mozzarella cheese – reduced fat
    ** cut into bite sized cubes – about 1 cup


Preparation:

1. Follow the directions on the couscous package.
2. Take a small bowl and mix the mustard and salad dressing using a whisk
3. Put all the other ingredients into a bowl, add the couscous and toss in the Italian drsg.
4. Allow to chill and stir before serving.

Prepare couscous according to package directions. In small bowl, whisk together salad dressing and mustard. Toss together couscous, dressing and remaining ingredients. Cover and chill 1 hour. Stir before serving. Serves 6.
